Asparagus: The King of Vegetables (In My Opinion)

Alright, I’ll be completely honest. Asparagus is my personal all-time MVP in the vegetable world. The taste is incomparable and for a brief time each spring you can be assured that I’m chowing down on these veggies every day. Whether they have just a bit of lemon juice or are smothered in hollandaise sauce, I am a happy camper when these little guys are in season.

A member of the stems and stalks family, asparagus is traditionally one of the first signs of spring. These young shoots sprout early and are a low carb dieter’s dream. Four spears contain only 1.2 g effective carbs and a negligible glycemic index and glycemic load. In addition, they are great sources of vitamins A, C, K, and folate.

The verdict? These are all-you-can eat, as far as I’m concerned.
